A: Soak wood chippings in water. While it soaks, add charcoal to the firebox and ignite them. After 30 minutes of soaking, take out wood chippings and add unto the lighted charcoals. Pour water in the water bowl and place directly under your meat grill, to moisten the smoking area and settle smoky flavour. For all kinds of recipes, add herbs and flavorful spices into the water bowl too for flavor enhancement. Then, place your meat on the grate over the water bowl, close lid and leave to cook. Cook meat at 1 hour or 1 pound, keeping the complete top on the whole of the time.
Use the exhaust dampener and air vents to regulate the airflow of the smoker. The dampener reduces grill temperature while the lower air vents increase it. Check food every hour, using a meat thermometer to check doneness. Also, check the fuel and water level, topping up if deemed necessary. Once the meat is ready, remove and let it cool, then serve. Q: How to make a BBQ smoker?
A: You can make a BBQ smoker out of a heat-resistant container, e.g. a clay pot or a barrel drum and a standard BBQ grate. If you’re using a barrel drum, make sure the insides are clean and free from flammables. Avoid using barrel drums that were used to keep flammables altogether. Better safe than sorry.
Next, cut open enough space for the lid off the top with a grinder. Then, attach the cutout lid to the barrel with stainless steel ingest and brackets.
